BROWNIES L’AMOUR VEGAN (NO DAIRY NO EGGS) Chocolate+mint+walnuts+Love

This is the recipe that I love to prepare for Valentine’s day. I believe that love must be shown everyday, and sharing homemade brownies anytime is a good way to do so. Do not forget that the most important ingredient is LOVE.

This recipe doesn’t use dairy neither eggs. Cream has been replaced by whole coconut milk, and eggs has been replaced by hydrated chia. Preparation time is 20 minutes and cooking time is 30 minutes.

Play some nice music, connect with that feeling of love in your heart and let the magic flow in your kitchen.

Hydrated Chia

  • 2 spoons chia seeds

  • 4 spoons filtered natural water

    Mix it well and let stand in the fridge for 2 hours. They will become like a gel. You will replace the eggs for this.

For the Brownies

  • 150 g organic chocolate (70% or 80% NO MILK )

  • 75 g vegan butter spread

  •   3 spoons chia gel

  • 1 cup organic brown sugar  (coconut sugar my favorite)

  • 1 tablespoon fresh chopped mint leaves


  • 1 cup self-rising flour ( or 1 cup flour+ 1 teaspoon baking powder + ¼ teaspoon salt ).

  •  ½ cup chopped walnuts

  • ½ teaspoon peppermint edible oil

  • more fresh mint leaves for decoration

  • small /medium Heart shaped cookie cutter ( optional )

  •   LOVE

For the chocolate fudge

  • 1 can organic coconut milk (whole not light)

  • ½ cup brown sugar 

  • ¼ organic cacao

  • ½ teaspoon vanilla extract

  • ½ teaspoon peppermint oil

  • more Love

Let’s do this!

Preheat oven to 350F. Paint an 11x7 oven pan with the vegan butter.

Put chocolate in pieces in a small pan plus the vegan butter at low heat. Add sugar. Once melted let it stand.

Mix the chia gel with mint leaves and peppermint oil. Add to the melted chocolate. Then add flour little by little while you whisk up continuously. Add Love.

Then add this preparation to the oven pan. Cook for 30 or 35 minutes until is cooked on top but soft in the center. Let it cool outside the oven. Unmold very carefully.  Use the heart shaped cookie cutter or cut brownies in small squares.

 Chocolate fudge

 Mix all the ingredients and Warm up the mix in low heat in a small pan, stirring constantly. Add Love. When you get the desired consistency just serve on top of the brownies. You can use some mint leaves for decoration.

Açaí Madness Smoothie

½ cup Açaí frozen

  • ½ Taza de pure de acai congelado

  • ½ taza de moras congeladas

  • 1 banana ( mediana)

  • ½ taza leche de hemp

  • 1 taza de espinacas

  • 6 almendras

  • 1 cuch de avena

  • amor


  • ½ cup Blackberries frozen

  • 1 Banana (midium size ) 

  • ½ cup Hemp milk 

  • Handful of Spinach 

  • 6 almonds 

  • 1 spoon Old fashioned rolled oats 

Poner todo en licuadora y servir con frambuesas congeladas arriba.

Curry de Vegetales Estilo Thai (Vegan)

Para este plato lo mas importante es conseguir la pasta base de curry rojo Thai. SI quieres hacerlo un poco mas picante te doy la opción de agregarle un poco de chile Serrano picadito en el momento que agregas todos los otros vegetales.

INGREDIENTES : 

  • 1 cucharada de pasta de curry rojo

  • jengibre

  • ½ cebolla blanca en juliana

  • 2 dientes de ajo picados

  • ½ Zucchini cortado en bastones

  • ½ taza de hongos shitakes, enteros o mitades si son muy grandes

  • kale cortado en tiras (col rizada)

  • 1 zanahoria en rodajas

  • bock choy baby en trozos

  • ½ morrón rojo y ½ morrón verde en bastones

  • ½ taza de flores de broccoli

  • 1 hoja de lemongrass ( lemoncillo ) opcional.

  • 1 cucharadita de azúcar orgánico

  • 1 taza de agua

  • aceite de coco

  • 1 lata de leche de coco para cocinar

  • arroz basmati para acompañar ( cocinar según indicaciones del paquete)

MANOS A LA OBRA!

Calentar una cucharada de aceite de coco en sartén y poner a saltear la cebolla , el ajo y el jengibre por unos 5 minutos. Agregar la cucharada de pasta de curry y mezclar. Agregar todos los vegetales , revolver y agregar la taza de agua. Mezclar. Echar la leche de coco. Agregar S+P+A , luego la cucharita de azúcar y dejar cocinando a fuego bajo hasta que los vegetales tengas la consistencia deseada , por lo menos 15 minutos.  Al servir agregar unas gotas del vinagre y acompañar con el arroz .
