Stuffed sweet potatoes with Love


Research has shown specific benefits of eating the colorful outsides of many fruits and veggies. In the skin of this produces a lot of antioxidants, minerals, vitamins are hidden. Here I share with you this recipe of stuffed sweet potatoes that is super beneficial to eat with skin-on. Sweet potatoes are one of the healthiest foods known and are ranked as the top nutritional vegetable by the Center of Science in the Public interest. The skin of sweet potatoes contain a number of additional nutrients, for example they are high in fiber and in several essential vitamins like C, E and folate. Buy organic when possible and scrub them well first to remove any dirt, then wash well with a solution of water and some vinegar drops, or just plain water. ( vinegar optional) 


-3 sweet potatoes steamed , in halves (organic) 

-1 cup cooked quinoa

-½ white or yellow  onion finely chopped

-1 tablespoon coconut oil

-1 green onion ( chives) finly chopped ( reserve for time of serving)

-Fresh Lemon juice

-Black pepper

-Nutritional yeast

-Garlic powder

-Pinch of salt


How to:

Pre heat oven to 350˚ . Steamed sweet potatoes cut in halves in a pan. Empty the potatoes with a spoon. Make sure you don’t break the skin and reserve this to fill them up later with the mix. Transfer content to bowl. Set aside . Sauté onion in coconut oil . Add to bowl of sweet potatoes pureé along with quinoa and lemon juice . Season with spices. Mix. Fill the empty sweet potato skins. Add some more coconut oil with a cooking brush on top of the sweet potatoes. Put on baking dish and, place in oven and cook for about 20 minutes. Sprinkle with love powder and serve with some chopped chives on top. Bon appetit!
