Spicy vegan avocado alioli

 

Who doesn't love avocados? and if you don't love them yet you should give them another opportunity. I personally can eat avocados everyday, and I almost do. And they are so healthy and good for you that I even try to give avocados to my 14 months old baby every single day. 

Among many other benefits, avocados contain more potassium than bananas, and this is a nutrient that most people aren't getting enough. Several studies show that having a high potassium intake is linked to reduce blood pressure, a major risk factor for heart attacks, strokes and kidney failure. Avocados also have good amounts of Vitamin K, Folate, Vitamin C, Vitamine , Vitamin B5 and B6. 

 

So today I will share this super easy way of preparing avocados. This vegan alioli can be used in different types of sandwiches, breads, potatoes or any chips.  Choose avocados ready to eat. Alway prefer organic and local produce when possible. 

Ingredients: 

-  1 ripped avocado ( save the skin to use as container for alioli) 

- 1 Tbsp. vegan mayo (optional)

- 1 tbsp. good quality olive oil 

- 1 garlic clove 

- 1 tsp. jalapeño minced

- 1 lime ( fresh squeezed) 

- green onion for garnish

- S+P+LOVE

Place garlic in a mortar and  smash. Add jalapeño minced and mash along with garlic. Transfer to a food processor along with the rest of ingredients. Season. Process for few seconds until you get a creamy consistency. You can use the skin of avocado to put the alioli inside. Serve with some green onion on top and sprinkle with Love. 

Idea: I spread this alioli in my portobello burger vegan sandwich that I had for lunch today. Use your imagination and enjoy the vegan avocado alioli on anything that you like.
