Brownies L'amour (chocolate mint vegan brownies)



Chocolate+mint+walnuts brownies (eggs free, dairy free)


Oh Valentine’s day … a day to celebrate love in all its forms.  And for me cooking is an expression of Love. When you cook, be cooking, be present. When you cook, think about the person that is going to eat your food, even if you are cooking just for yourself. Feel the responsibility that you have in your hands, because we are what we eat. So always add love, and your meals will taste amazing!


I was thinking a lot about what to share with you on this special day… and all that came to my mind was CHOCOLATE and LOVE. So I decided to prepare this vegan heart shaped brownies. I thought about adding some mint (Chocolate/mint is my favorite flavor of all times), and why not some walnuts as well? The beauty of homemade cooking is that you can experiment and combine all the things that you like. 

This is an easy recipe and you don’t need any fancy equipment.  Preparation takes only 20 minutes and 35 minutes to cook. I replaced eggs with soaked chia seeds,  regular butter with vegetable spread, and regular milk with coconut milk.  So play some romantic music, take a deep breathe in … and allow  Love to flow in your kitchen.  





- 5 1/2 oz/ 150g organic dark chocolate 

- 6 oz/ 175g vegan butter ( I use Nutiva shortening for baking) 

- 2 tbsp chia seeds ( soaked in 6 tbps water for few hours or overnight) 

- 1 cup organic mascobado sugar ( or maple syrup or molasses) 

- 1 tbps chopped fresh mint 

- 1 cup organic self-rising flour 

- 1/2 tsp organic mint oil or peppermint extract

- 1/2 chopped walnuts 

- fresh mint leaves to decorate 

- Love 


- 14 oz Coconut milk ( from a  can and regular , not light ) 

- 1/2 cup mascobado sugar

- 1/4 organic raw cacao poweder

- 1 tsp vanilla extract

- 1/2 tsp mint oil 

- more Love 


Preheat oven to 350°F/180°C. Grease a 11 X 7 inch (28 X 18cm) cake pan. 

Pleace the vegan chocolate, vegan butter plus the sugar in a pan over very low heat. Stir the mix until melt. remove from heat. 

Beat together the chia mix, mint leaves (chopped) and mint drops. Then beat quickly into the chocolate mixture. Fold in the flour, the walnuts, and mix evenly. Add Love.

Pour the mixture into the prepared pan. Bake for 30-35 minutes until just firm but still slightly soft inside. Let cool in the pan of 15 minutes, then remove from pan and cut brownies using a heart shaped cookie cutter, or just cut squares. 


For the sauce:

Whisk all the ingredients and put the mix into a small pan in low heat, stirring constantly until well mixed. Add Love. Remove and pour on top of your brownies. Decorate with fresh mint leaves. Add more love. Share. And enjoy!
